Sweet Radicchio Summer Salad
What you’ll need:
1 small head of radicchio
A few handfuls of spring greens or arugula
1 honeycrisp apple
1 shallot, diced
A handful of walnuts, lightly toasted
About 3/4 cup of cheese (Gorgonzola cheese or goat cheese would be the best for this salad, but I used shaved parmesan because my husband hates gorgonzola and goat cheese)
For the dressing:
3 tbsp good olive oil
Juice of 1-2 lemons (depending on the level of citrus you prefer)
2-4 garlic cloves (depending on preference, grated or chopped)
Salt and pepper
Optional: about a tbsp of dijon mustard
How to make it:
Chop your greens, apple, and shallot
Toast your walnuts on the stove over medium heat until fragrant
Make your dressing
Toss to combine
Top with cheese and more pepper
