Kale Summer Salad with a tangy/sweet Dijon dressing

What you’ll need:

  • A few handfuls of kale

  • About two cups of raw broccoli, sliced into bite sized pieces

  • 1 honeycrisp apple, sliced into matchsticks

  • 1 shallot or half of a red onion, thinly sliced

  • Gouda or white cheddar cheese, sliced into matchsticks

  • Walnuts, toasted

  • Dried cranberries

Dressing:

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • 1 tbsp Dijon

  • 1 tbsp honey

  • Minced garlic to your preference

  • Salt and pepper

How to make it:

  • Dice and slice all of your ingredients

  • Toast walnuts over medium heat for about 4-5 minutes

  • Massage kale with a tiny bit of olive oil for 30 seconds so it doesn’t taste gross

  • Toss in the dressing and everything else

  • Top with cracked black pepper
