Kale Summer Salad with a tangy/sweet Dijon dressing
What you’ll need:
A few handfuls of kale
About two cups of raw broccoli, sliced into bite sized pieces
1 honeycrisp apple, sliced into matchsticks
1 shallot or half of a red onion, thinly sliced
Gouda or white cheddar cheese, sliced into matchsticks
Walnuts, toasted
Dried cranberries
Dressing:
3 tbsp olive oil
Juice of 1 lemon
1 tbsp Dijon
1 tbsp honey
Minced garlic to your preference
Salt and pepper
How to make it:
Dice and slice all of your ingredients
Toast walnuts over medium heat for about 4-5 minutes
Massage kale with a tiny bit of olive oil for 30 seconds so it doesn’t taste gross
Toss in the dressing and everything else
Top with cracked black pepper
