Quick & Easy Stir Fry
What you’ll need for the chicken:
1.5 lb boneless skinless chicken (breast or thighs) chopped into smaller pieces
Olive oil to coat the chicken
About a teaspoon each of salt, garlic powder and paprika
What you’ll need for the sauce:
1/4 cup soy sauce
About a half teaspoon olive oil
1 tbsp rice vinegar
1 tsp sesame oil
2 tbsp brown sugar
1/4 cup water, mixed with 1.5 tsp corn starch
2-6 cloves minced garlic
A few tbsp of chopped or minced ginger
How to make it:
After coating your chicken with olive oil and evenly seasoning it, let it sit for 10-15 minutes while you preheat your air fryer to 400 degrees. Then, air-fry the chicken for about 10-15 minutes (check it periodically so you don’t overcook it).
While the chicken cooks, whisk together your sauce mixture.
Once your chicken is almost ready, heat the sauce over medium heat in a wok or large pan.
Add the chicken once sauce starts to thicken.
Optional: toss in cooked or raw veggies such as bell pepper, green onion or broccoli.
