Lemony Pasta with Sausage & Parmesan
I didn’t follow a recipe for this, so I’ll list what I used and how it came together but feel free to make any tweaks for your preference! I made a slightly larger batch because I wanted leftovers.
What you’ll need:
Brami Radiatori pasta (I used 1.5 boxes)
Olive oil
1 large shallot (or 2 small ones)
5 cloves garlic
Red pepper flakes
Ground sausage (I used a pound of turkey)
Juice from 3 lemons
Grated parmesan (I probably used 2 cups worth)
Fresh parsley
Salt & pepper to taste
How to make it:
Get a large pot of salty water boiling.
Cook pasta for the minimum recommended time (you want it just about al dente).
In a large pan, sauté shallot, garlic, and red pepper flakes in olive oil. Once fragrant, add your sausage and cook until browned. Set aside.
Reserve 3-4 cups of pasta water and drain your pasta.
Return pasta to the large pot and mix in the sausage, shallots, and garlic from the other pan.
To the pot, pour in lemon juice and about a cup of pasta water. Then, add your parmesan in small batches and stir, adding more pasta water and parmesan as needed to get a good saucy consistency.
Mix in fresh parsley.
Season with salt, pepper, and red pepper flakes to your liking.
Optional: drizzle with a very ripe olive oil.
