Lazy Esquites (Mexican Corn Dip)

What you’ll need:

(But seriously so easy to make this your own with little to no instructions. Corn + mayo + seasonings + whatever else you want!)

  • Bag of frozen corn, steamed (if you’re lazy like me)

    • OR shave off about 3-4 ears of corn, boiled or grilled

  • 2 oz feta or Cotija cheese, crumbled

  • 4 tbsp mayo

  • Juice of 1 lime

  • 2 cloves garlic, minced

  • Chili powder, cumin, chipotle seasoning (I used about 1 tbsp of each, but season to your liking)

Optional add-ons, chopped:

  • Scallions (I used about 4 stalks)

  • Red onion (I only added about a quarter of the onion)

  • Cilantro

  • Jalapeño

  • Bell pepper

How to make it:

You pretty much just mix everything together… Don’t overthink it. Start with the corn, mayo, and lime juice, and then once you get that mixture to the consistency you like, add in your seasonings of choice + garlic and any other add-ons you’re into!
